Oh, if I didn't mention this, Modern Macs do not support Audacity 1.2. Get Audacity 1.3.12 from here: http://audacityteam.org/download/ If you use MP3 or other compressed formats, you should get "lame" and "FFMpeg" from the same place. Do not use older versions of those plugins. ...

Yes, the volume control on the Behringer is for the headphones. the input is extremely faint when used with a turntable. And, if you listened to it carefully, it's gutless. You posted in a section of the forum where we can't tell a thing about your system. It's a Mac, right? Turn the speakers down. On a Windows machine, you can turn down the speaker system with the icon on the lower right.

I think it would be nice to have a feature in Audacity where the window would be dynamically rescaled. That might be the last thing you want. Why are you creating MP3 files in Audacity? iTunes native uses AAC, not MP3 and it's a simple matter to make iTunes do the conversion for you. No lame needed.

One common way to confuse Windows is to have "funny" characters in the filenames. Did you try to put dates in your filenames? Operating systems hate the "/" character. That would create a conflict between the folders you can see and the ones Windows or iTunes sees. Start there. A...

Actually, your problem may be a bit more straightforward than that. Audacity 1.2 is not supported under Snow Leopard. Get Audacity 1.3.12 from here:
