At the bottom of your work window, do you have "Snap To" selected? Deselect it. You may need to restart Audacity.

You should view the blue waveforms and make sure none of them ever goes all the way up (or down) to zero. That creates clipping distortion which is permanent and fatal. iTunes doesn't "Normalize." It tries to overall compensate for loudness variations -- on Playback.

The adjustment is in the Playback panel and says:

[X] Sound Check.
Automatically adjusts song playback volume to the same level.
