iTunes > File > New Playlist
Drag your music from the general iTunes area into your new playlist.
File > Burn Playlist To Disk > OK the burn dialog.
ONLY THEN put a blank CD in the Mac -- when it asks you to.

You seem to be perfectly on top of this, just misinformed. The iTunes tools create a delightful Music CD from your music -- either AIFF or WAV. Import both files. One will appear above the other on the timeline. Copy the bottom one, select the end of the first one and paste. That's the good news. The bad news is you can't export and create another MP3 without some pretty serious damage from double compression. You're far better using an MP3...
