Windows Properties might tell you the bitrate that was used for the MP3 encoding. Right-click the sound file > Properties > Advanced. Changing the selected input device in Audacity should not change the system device. No surprise there, but I always assumed if I force changed the Mac, Audacity would try to follow me. You defragmented, but do you have enough drive space? I forget the accurate number, but it's megs per minute at the default Audacity capture configuration.
Anything else going on with your machine? Does it still do that if you disconnect the internet and restart?

Is it not possible that associated - shall we say - informal methods of production and mastering eg in the bedroom are responsible for this? It sounds like that because you're recording your laptop microphone instead of the turntable.
