Put the cursor where you want a break and Generate > Silence. A panel will open explaining the options. You can mess with it there, or just accept them and cut the silence to suit you later in editing.

You can totally do that, just not in Audacity 1.2. Get Audacity 1.3 and use Transport > Append Recording.
