We do warn you that you need to be able to make a simple recording with your microphone before you try any of this fancy stuff. Can you do that? Press record and capture your voice in a simple track.

Yes. You can set Audacity Preferences > Recording > [X] Overdubbing to on and [ ]Playthrough to off. You may still get timing or rhythm problems in the mixed show, but you can fix those with the Time Shift Tool (sideways black arrows). See if that's going to work for you. Which model number exactly?
There's a vey good chance you're not recording the USB signal from the turntable because you have no volume control over that and having a level that far wrong is highly unlikely on a name-brand turntable.
