I don't think that's up to Audacity. The operating system creates those dates any time a file is created.

Are you overdubbing/multi-tracking? That's feedback. Audacity is recording itself instead of your microphone. Make sure Audacity Preferences > Recording > Playthrough is not selected. My impression is you're asking the wrong questions. What did you call the show? What was the exact filename? You can cause problems if you use punctuation or odd characters inside a filename.
