I'm not a linux weenie, but if Audacity works across platforms, you should be able to set the Device Toolbar to route music to where you want it to go.

Windows insists that when you plug in a USB turntable, it's going to accept sound from, and send sound to the turntable -- not the speakers. So your speakers drop dead. Try closing Audacity before you close VLC. If you close VLC first, that will close Audacity's recording device and could leave Audacity in an unstable state. You get the same effect if you unplug an USB microphone while Audacity is standing on it.

There is a section of the edit window that has a picture of a microphone. That's the Device Toolbar for recording. Did you miss a step? He recorded it quietly to a cassette and you played the cassette into Audacity, right? There could be two problems. Getting a cassette into a Windows machine can be a challenge and if you do it wrong, the distortion and noise go way up. How did you connect them? Quiet cassettes ...

It depends on the sound card, the microphone, and how you have everything connected. What, which and how? USB microphones do not like going through a USB hub with other equipment.
