Look at the top of the audacity window at the device toolbar -- microphone symbol. What does it say there? Does it indicate "USB Sound Device" or something similar? Did you try to use Skype in the middle between recordings? Did you unplug the tape machine? With the tape machine plugged in,...

iTunes.
iTunes should have burning tools. Create a playlist with your music in it and then File > Burn Playlist to Disk.
If that fails, then you have a serious system problem. Your CD device is a CD-R, CD-RW, right? Can you point to somewhere that clearly says that?

None. On some DAT machines, the only convenient way to get analog sound out of the machine is adapt the headphone jack to stereo RCAs.

We do well with our around the earth coverage. A USB microphone will only show up in Audacity if the mic is already there when Audacity is started. You can also Transport > Scan for Audio Devices.
