The 1/4" inputs of this mixer are line-level, not microphone level. There is only one Microphone input per section on this mixer and it takes XLR .
That should cure your noise problem.

The first knob upper left on the mixer next to where the microphone goes in. Gain. Where is that set?

Missed a step. For the amplify trick, you have to Allow Clipping.

Without raining on this too much, has this ever worked? Unless the software "knows about" voice over internet, you're only going to get one side of the conversation, not both. How did you record the interview? What you probably have is your own very loud and clear voice plus the tiny leaka...

By the way, when I did use the playthrough, I had no issue with latency... You're the one. Most of us have just enough Playthrough Latency that you can't sing or play to the original tracks. Oh, and you have feedback the way you're doing it. Anyway, you need two mixers -- or two independent mixing ...

Can I guess you can't get the voice files out of the iPhone? We can't either. It may take specialized software to do that. Audacity only works on sound or entertainment files you already have.
