While you have the show on the timeline, change the sample rate with the lower left-hand window.

You can use the Audacity Overdubbing feature to listen to one track while you're recording an independent second track. Have you ever run the Activity Monitor while you're trying to edit? It might be useful to know what's overloading; disk activity, CPU activity, etc.
