This is the only way to do that reliably. You have to listen to your mic or mixer, not the computer.

Some USB devices are sensitive to being Stereo or Mono. Change the Audacity recording preferences to mono and see if the USB connection appears. I have a microphone that does this.

You may need to Transport > Rescan.. to get it to show up after you change the settings.

Probably not. Audacity Projects do not save UNDO and if you stepped on the original sound file with your correction, that's the end of the show. Audacity does not do forensics. Is any of your work posted where we can get to it? Do you have before and afters? The only problem I can see with any of that is that it's six months further along than most of our posters. Have you had to "clean up" any of your works by getting rid of the dog barking, metrobus starting up...
