Are you in 16-bit? I forgot to ask and you didn't say. If you're doing production in 96000/24-bit, this is an enormous show and you may run out of computer resources relatively quickly. Koz

Which Windows? The size of the show isn't as important as you think. Every time you do something; apply a filter or an effect, Audacity has to save UNDO. On the bottom of the Audacity work window, see if "Snap To" is selected. De-select it.

If you suspend the microphone, pad the room but leave the table bare. I don't think the analog RCA pathway is better than the USB. I think the USB digital converter inside the cassette machine is probably better than the default digital converter inside the hot, electrically noisy computer. Do you remember the posting where someone told you the RCAs were better?
