That works for me on all my Macs. Sometimes I forget and leave that running when I'm trying to record a microphone. That's not a good combination.You can try Transport > Hardware Playthrough or Transport > Software Playthrough in Audacity.

You may be reading too much. I think you installed both the regular, high quality method, and the desperation method. The two methods run at slightly different speeds in the computer and that gives you the echo. I would not be using that cable between Headphone-Out and Mic-In. Those two are not dire...
