Uninstalling Audacity can be an adventure.

Audacity > Edit > Preferences > Devices > Recording. Is your device listed there? Stereo?
Audacity > Edit > Preferences > Quality > Sampling: 44100, 16-bit.
Those are generic settings that almost everybody supports whether they can go higher or not.

Nope. You just get 100 Hz with more moxie. You'll get an interesting combination if they're not both exactly 100Hz. You just called out the problem. There should be dead silence before you click the meters into Monitor Mode. You have dueling sound pathways. If you like to record internet audio, you generally record from Stereo-Mix or some service like that. You need to stop using Stereo-Mix during live production...
