Which version of Audacity are you using? The very old versions used to default to mono.
Audacity > Preferences > Devices > Recording > Channels: [X] Two (Stereo).
Does your iMac have these connections?

That should sound awful. Does it sound bad at the headphone connection in the front of the interface? You have the Phono button pressed and the USB is the only cable between the Mac and the interface? I see you can switch between Moving Magnet and Moving Coil. Those two have different levels. Have you tried connecting the Samson to another computer with Audacity and just let it run for an hour? Do you need a performance to have it occur?

That happens when you record Stereo-Mix instead of your voice. Stereo-Mix is "everything on the computer." Audacity > Edit > Preferences > Devices > Recording. Pick your soundcard or microphone, not Stereo-Mix or What-U-Hear. Audacity > Edit > Preferences > Recording: [X] Overdubbing, [_] ...

What if you play the work through Windows Media? Any difference?
Some players have special effects you can apply during playback like "Concert Hall" or "Disco." One of the IT people left "Carnegie Hall" running on a machine I was testing and it made me crazy.
