I just processed a Saturday radio show and I didn't hear anything wrong with the beginning or end.

You should post the damage you're hearing on the forum. You may have to do it in multiple passes due to forum restrictions.

I use iTunes free on both Mac and Windows. It has a ten band equalizer.

Just to take the obvious first. Audacity looks for microphones when it starts. Restart Audacity with the headset plugged in.

I do. I have one of these, but I don't recommend it because it has very low volume. Even with powerful microphones, the recording always needs adjusting to be loud enough.

MP3 has a Quality Slider. There is no single MP3. You can tune it. File > Export > MP3 Files > [options] > Quality.
