Audacity does not manage Time Of Day and we can't Scrub. So this may not be the best software for you.

Do you have the piano plugged into the same power outlet as the computer? That's usually desirable to help with noise problems. Many people use a power strip and plug everything into that. Is the usb hub plugged into the same outlet as the computer? That's usually desirable to suppress mains hum problems. If you can reverse the plug, try that.

I don't remember if it's a laptop... Can you run it on batteries long enough to test for noise?

Right. Because the instructions are to move the Audacity folder into Applications, then open the application inside that.
