Change iTunes "CD Import Format" to WAV in the iTunes Preferences. Open the song in iTunes and when it arrives, Control-Click on it and say yes when it offers to convert it to WAV.

Then drag the new WAV file out of iTunes and edit that.

To record both sides of a cellphone, I use an Olympus TP-7 or TP-8. It's a live microphone that you put in your ear and then make the call on top of it.
