Without the special software, the box turns into a straight Left-Right digitizer -- what you have now. You need the software license to make what you want -- or create the two-track show artificially later in Audacity Post Production.

Try changing the Audacity Preference settings:
Devices > Recording > Stereo or Mono (there's no way to know -- try both)
Quality > Sampling > 44100, 16-bit.
Most devices support that and it's a good place to begin.

While it's possibly to eventually get a reasonable match, it may take you a very long time. You should find someone with a good graphic equalizer in their sound system and play with that in real time. Oh, there's another little nasty that Audacity likes to do. It volunteers to save your work in /Applications/Audacity. Do Not let it do that. Save your work on the desktop or some other folder where you keep work.

That's a built-in service that Audacity has called Overdubbing. If you set up for that, Audacity will play your old tracks (as many as you select) into your headphones -- or speaker system at the same time you can play along and record that on a fresh, new track under all the old ones. http://manual...
