Undo stacks for each project that is open.
Maybe yours does. I swear I needed to apply different filters and remove them on two different windows and they followed the order of application, not the window focus. That's when I gave up to make a cuppa.

Audacity will not record on-line video. Worse,it may conflict with video recording software if both of them are running at the same time.

44100 is the sample rate for Audio CDs. 48000 is the rate for digital television. Many music performers record at 96000 with the idea of maintaining quality through many multiple edits and filters. Anything above that is overkill.

You have never been able to open two independent instances of Audacity. The best you can do is two different views of the same show. I think Effects UNDO is linked as well. If you went back and forth applying effects to first one window and then the other, they will UNDO that way as well, regardless...

Audacity resets itself every time you restart it. If you have a WAV, MP3 or other simple sound file, drag it to the trash can. Also, Control-Click on it and 'Move To Trash'. Opening up help in the web browser doesn't mean Safari is going on-line. Mine goes into the Audacity application folder and gets the help from there. What's the possibility you didn't install Audacity quite right? Did you get an Audacity DMG file from somewhere, open it up and drag the Audacity fold...

Yes. If your plosives are actually blowing air on the microphone, that will create some serious damage. I can hear my guitar tone when my PA speaker is plugged into the Phones port of the UX2. Either that or your headphones. Both should work. My keyboard only has a Phones connection and that's how I connect it to my sound system and recorder. You got me with the Pod Farm 2 software. My first reaction...
