Setting perceived loudness is a pain in the neck, so most of these tools set everything by peaks. Whoever's head is sticking up in the blue waves wins. You can change the Audacity default specifications in preferences.
Audacity > Edit > Preferences > Quality. Stereo/Mono is set in Devices.

Yes. pretty much. Snuggle up to the Yeti and find out if there is a distance/spacing that gives reasonable voice quality and helps to ignore echoes.
