There is one other possibility. You can get some seriously oddball sound if you don't plug the cable in all the way or there is corrosion or dirt on the plug. Plug in the cables and rotate the plug a couple of times to make sure of a complete connection.

Maybe the problem isn't in Audacity or the computer. Sometimes the connection to the mixer doesn't deliver stereo. FX Send, for one example, is usually mono. The center channel was not missing when I downloaded it! I removed it using my technique (with Steve's help). All four segments are audible unless you're listening on a mono speaker or sound system. I have no experiences with a Yeti, but I've used a snowball and that's always done exactly what it's supposed to do. I would try a different USB cable before I took it back.

It's very difficult to split the two halves of a bi-directional recording captured as one track and produce a balanced show.
