VB-Audio Software comes with its own recorder. You don't need Audacity at all for that. Maybe post production. Old and new strings sounding different would be the project. "Note the overtones of the old string have shifted down slightly and the harmonics around 3,000 Hz are less leading to a mellower sound.

Do you have the Line-Out or the Headphone Out of the keyboard plugged into the laptop Mic-In? Stop doing that. The two connections normally are incompatible with each other. How are you controlling for plucking energy? If I pluck a string harder it's going to get louder no matter how old it is.

Macs have no native provision for Self Recording. Soundflower provides those special pathways. Macs have all other normal sound pathways pretty much licked without Soundflower.
You can get some lovely feedback and distortion by using Soundflower inappropriately.

I believe this is a known problem. AAC/M4A exports do not have a complete range of quality options. Someone will correct me.
