That's close to the bottom of concerns. If you can get one good track somehow, we can make everything else. Almost all of my stuff is shot mono and delivered "stereo" to the show editors because I know that's what they're expecting.

You can simply get closer to the Yeti and help with this. Bring the microphone to within 8 inches or so (or closer. Audacity doesn't directly support the stereo tools in the Yeti. So if you got it to work in mono, that's a good as it gets.
