You should not be directly converting to MP3. You should export from Audacity in high quality WAV and use that for archive and production. And if you're completely obsessive, Duplicate the one remaining track (Control-D?) and using the dropdown menu on the left > Make Stereo Track.
But one Mono track should play to both speakers as well as a fully-formed Stereo track.

I can't actually say that, because the instructions didn't say that, but that's my guess. Check Audacity > Preferences > Devices > Recording.
