While I can play each one individually in iTunes, I am totally stuck on HOW to create a Playlist, as try as I may, I cannot seem to get my WAV files over to iTunes in any manner. Take a breath. The Audacity tool for that is Effect > Vocal Removal. There's a long list of problems you can have with the music that can cause the tool to fail. There is no simple way to clear up a voice. Sometimes you can get Equalization > Telephone preset to help a little.

Transport > Timer Record
You can also use Transport > Sound Activated Recording to avoid recording continuously with no sound.
