Audacity doesn't make a 2.1. The current version is 2.1.0. If you really are using 2.1, then it may be a bogus version. Audacity has very poor MIDI support. You would need a MIDI sequencer.

The harmonics and overtones are what separate high quality instruments and performances from poor ones. If we could easily swap out the overtones, everybody could have a Stradivarius. I think I see. You are using the Audacity live playback speed control which has the effect of dragging your finger on the record, but the basic song doesn't change. If you want permanent speed shifts, use the effect. Select the song by clicking just above the MUTE button. Effect > Change Speed. Then...

Which sound standard did you use? I use mostly 44100, 16-bit, Stereo. Does it still do that on that same clip after you restart the machine? And just to cover it, you don't have a million applications napping in the dock and you have plenty of drivespace (how much) and you're not trying to live play...
