You're listening to all this on very good quality speakers or headphones, right? When you Export the work, Audacity will mix it down for you to a stereo show. Use WAV (Microsoft). Do Not use MP3. 100x better than the crappy MP3 did. Again, it's probably not "one" MP3. It's probably been through multiple MP3 compressions. I bet if you play the CD and play the MP3, they don't sound the same. They're supposed to. A properly made MP3 file is indistinguishable from the original perform...

I am currently running 2.1.0, haven't bothered to update
Unless there is a specific reason to upgrade, you probably shouldn't. Audacity 2.1.2 will have patches for mistakes in 2.1.1.

When you export sound with a fresh Audacity, it tries to use WAV (Microsoft) for which there are no options.

I don't know of any way to disable the other exporting options.

There is a lot of noise in the background What kind of noise? Audacity Noise Reduction only works with noises that don't change like computer fan noises, air conditioner noise, or microphone hum.
