Audacity will stop recording during silences with a setting.

Edit > Preferences > Recording: [_] Sound Activated.... (de-select)

In case I wasn't clear, it's not a bad idea to watch the Audacity sound meters out the corner of your eye while you perform. The good news is your voice is perfect and clear and the background sound (room tone) is undetectable. The not so great news is the voice volume is super low. That's the other reason I doubt the $27 solution works just like a studio. That's a Blue Yeti USB microphone famous for producing low volume, slightly hissy work.
