You didn't say anything about a mouse in your equipment list. MB and MBPs don't come with one. If you're using your touch-pad simulation, those changed enormously over the versions.

Plugging into the computer direct or using the laptop microphone can give you Skype or conference voice quality because of Windows processing. It hates music. You can do your own noise search. I did think of a reason not to use too long a profile. You're more likely to capture sounds by accident that aren't noise. Hyphen, N-dash and M-dash aren't even present on my keyboard
Shift Option Underscore key will give you (I think) the Em dash—useful for joining semi-related phrases. So yes it does appear on the keyboard. I can't get the other keyboard shortcut gyrations to work.
