On the old machine, you were probably recording soundcard services, On the new one it sounds like you're recording the actual speakers and microphone, with the shortcomings of both.
The newer loopback services should solve that.

It is not written you have to use the computer, either. There's some very nice stand-alone recorders out there, such as Tascam, Zoom, and Olympus. We're now in the process of rescuing a recovery. The system was never designed to do that, so unless somebody has additional ideas, you should probably start thinking about what you would do if the show doesn't come back.

You have multiple tracks, right? Each Export starts OK, but doesn't stop until it hits the end of the longest track, or another label on that track. I don't remember the solution. You can make it be decibels with the drop-down menu system to the left of the track. The default is percent (100%=1.0). The sound meters are more obviously in dB.
