You can lock tracks to each other, but not lock everybody out. Ganging tracks will just create more damage. You're looking for a theatrical media player, maybe?
You can quickly UNDO a move. Control-Z in Windows.

Unplug everything and record on your laptop built-in microphone. Those can have serious problems, but clicking isn't generally one of them.I now have to wonder if my mouth produces the click sounds.

export(save) You should make that crystal clear straight away. Audacity Saves Projects and Exports sound files and they don't cross. My particular application was a mono microphone and that's the Audacity I used for the illustration. Yours should say 2 (Stereo).
