It's nice to think you can place markers at the important bits and have half the editing done, but that only sheers off the junk, and it only works if the interview doesn't get insanely interesting near the end. Most people mean the wrong thing when they say "Audacity files."
An Audacity show or Project is an AUP manager text file and a _DATA folder with the same name.

You got several strikes against you. Unless you got recorders with good quality timebases (I don't. Mine are junky USB recorders) you can't start with an external player and "put the times back in." At least not easily. And strike two, MP3 is not the celestial gift for timing and precision...
