I would like to mute or lower the string section and only those instruments so that I can play that part myself. That's the exact place you would use a MIDI editor/manager/sequencer. After you get the song just the way you like it, then you can get Audacity to play it as a backing track for overdub...

Is there a way to set a recording time at 1 minute, enough to start recording and run to the vocal mic? Ask that again and use different words. That's not to say I haven't screwed things up. Just not for hire. I have a recording that captured twice, at the same time, a fraction of a second apart, and it drifted. I have zero idea how that happened and it only happened once.I have never lost a paid gig.

two consecutive mono tracks into a stereo L/R pair. That will give you four stereo tracks. Without knowing what the original 8 tracks were, you could get a stereo show with dialog on the left and bass notes on the right. You have to know something about the original show.
