As a general rule, Audacity gets the signals after Windows does. So it's your job to make sure you have the correct Windows drivers, interface software and setups. You can have some very serious problems because the driver software has to explicitly say "Windows 10," not just "Windows...

Can you roll the machine back to Win7?
Windows 10 is not an upgrade. It's a New OS and lots of very nasty things happened to people who did the "simple upgrade."

From where? What are you trying to record?Audacity will not record any sound.

Restart Audacity.
Audacity checks for devices when it starts. If you plugged in the X2U after Audacity started, it will be invisible.
You can also use Transport > Rescan...
Let us know how you like your X2U. We're always on the lookout for different sound devices.

I don't know that I would have done it that way.
Split the two stereo tracks. Delete the two you don't want. Make stereo track from what's left. No?
