Someone will correct me, but I believe the upcoming new version of Audacity can do that.

If the show is stereo, Tracks > Stereo to Mono.
Sample rate is set with the little window in the Audacity lower left. I think you can get to 8-bit in File > Export > Other Uncompressed.

I'd use the UCA202. You'll need adapter cables to get to dual RCA. You can listen to the UCA202 by putting your headphones into the headphone socket and switch to Monitor. You can listen to the Mac by setting Audacity to Playthrough. Audacity > Preferences > Recording. (I think...) Those two sounds ...

You may not be able to hit the beginning of the track anyway. I can't always do it. On a moderately long show, you're trying to hit a one-pixel point. I use the Home key. Many laptops have a key combination that works out to "Home." Mac laptops is Fn + Left Arrow and Audacity respects it. ...

The above sound shoot had another trick. I avoided buzz and hum from the overhead fluorescent lights by doing the whole shoot with desk lamps and undimmed incandescent light bulbs.

So the frequency of the current makes a hum? Not if everything is working properly, no. However reputations have been made by people figuring out ways that mains power can get into the show by accident. The simplest way is a broken power supply. Electronics doesn't work on AC. Almost all of it work...

The DeEsser is not a gift from the angels. It's officially experimental and it has little tricks. For one example, I don't think it works in stereo.
