You may be able to fix the first half of that by recording in Stereo. After the shoot, use the drop-down menu on the left Split Stereo to Mono. Delete one of them. I still can't account for the drop in volume.

I changed out the Mic cable and removed High Pass Filter. You probably didn't need to do that. Any reason you used the Line connection instead of the USB? I don't know there's any further tricks past what you're already doing. The general rule requires you to be able to understand the words before processing. If you can't, many of the tools stop working because they depend on detailed manipulation of the words. Noise Reduction in particular only works...

If you can't hear yourself, you should make sure that Preferences > Recording: [X] Playthrough is ticked.

In that case you can reduce everything to mono. The music bed, Tracks > Stereo Track to Mono, and you can record your voice mono if the system will let you.
