Audacity doesn't have smash record. You can select a track and press Append-Record (Shift-R.) Audacity will jam the new work on the end of the old track.

You can also select a point in an existing track and press Record. Audacity will start a new track at that time position.

I can look it up, but it's scary you found a need to remove system fonts. Macs tend to be tightly integrated. Mess with QuickTime services, for example, and you can turn a Mac into rubble.
