The clocks mean you have Universal Sync selected. Audacity will try to keep all your tracks perfectly in sync no matter what you do. Turn it off with the clock in the line just above the blue waves.

I don't understand. If your project name is 008A - 008B, then the AUP file should be 008A - 008B.aup and the folder should be 008A - 008B_data. I think I would select small segments of the concert and File > Export Selected Audio. You can use Labels to help you identify the beginning and end of each segment.
