I expect what you got should work a lot better than it does. So you have a good quality conventional analog turntable, right? I'm not sure where to go with this. The Dish Towel version has better tonal balance, but the towel reduces the overall volume and you don't have enough volume to begin with. This causes the track to violate the noise specification, which causes tonal distortions, which causes.... etc, etc, etc, etc....

I think I understand the problem. If you don't have FFmpeg installed in Audacity and you load a file Audacity doesn't understand, it will play the sound with no decompression—very rapidly.

I've tried installing a newer version and reinstalling that version twice
The Windows installer has provision to reset settings and preferences. It's not automatic and if you don't select it, your possibly damaged settings will carry over to the new install.

I don't think the overly crisp gritty sound is you. I think the microphone is doing that. Do a forum test and throw a dish towel over the microphone. Not bath towel, that's too heavy—or maybe a cotton T shirt.

We can make this more complicated. The forum has about a 2MB file size limit. That works out to about 20 seconds of mono WAV sound file. Could you fake out Chains? Make hundreds of copies of the show each with a slightly different filename? Ummmmm. No, because Chains will probably try to apply one effect to them all sequentially.

What's the show? Sometimes we can figure a different way to get the same result.

Audacity gets its sound from Windows and Win10 has its own sound meters.
Right-click on the speaker icon in the bottom right tooldock - then click on Open Volume Mixer
Do you have it there?

Which microphone by part number?

As a fuzzy rule we can't remix a mixed performance. If you do a spectrum analysis of the instruments individually, you'll find they have a lot of the same tones and harmonics, just rearranged and some louder than others. This is one single piano note. It has tonal energy over the whole left-hand 2/3...
