That's against the possibility of the upgrade weirdly damaging one or more of their valuable projects.I see the user is reluctant to let go of 2.1.1, but why?

The DC offset is definitely a hardware problem. You can't directly hear it You can't hear it, but it makes audio editing a complete nightmare. Every edit has a pop or click. It's a land mine. You can change the sample rate with the little window in the lower left. You can change the bit depth by exporting Other File Types, although I don't think you have to worry about the bit depth too much. That slides around. A lot of that nit-picky, setting-by-setting goes away with the newer tools.
The only part that's not automated is noise. That's still a little magic.
