The obvious one is to make sure Audacity is set to stereo next to the microphone symbol in the main work window. The not-so obvious one is to make sure Windows is set for stereo. You do that in the Windows control panels. Start (lower left) > Control Panels > Sound > Input (from fuzzy memory)? Koz

No, and you didn't mention the next obvious problem. You'll need a video editor to put your finished work back into the video. Audacity can play and edit many video formats—more with the FFMpeg add-on, but it will only produce a stand-alone sound file when you get done.

Open the file in Audacity. Make sure you're looking at the whole thing, Control-F. Drag-select only the first 3/4 of it.
Analyze > ACX-Check > OK.
