Audacity > Edit > Preferences > Recording: De-select [_] Playthrough Select [X] Overdub Select [X] Always New Track Audacity > Edit > Preferences > Devices: Make sure you're recording a real thing. If you really like to record Internet Audio (YouTube, etc)...

That actually doesn't appear to be that far off (although it could use work). You're using ACX-Check, but are you using the rest of the Mastering Suite? is there any audio lag? Put the Monitor switch on and then you can listen to your live performance in real time. That's one of the reasons this device is certified for Perfect Overdubbing. Not in Audacity. We can't split apart a mixed performance into individual voices, instruments or sounds.

Chances are terrific that's MIDI, not digital music. That's how mine work. I record the headphone connection of both keyboards.
