I'm stringing together a series of sound files into big composite files. Most of the little files are me talking in a rumbly baritone. Alternating with my voice is transitional music, much of it flutes and other high instruments. I want my listeners to perceive the same volume across all the files, ...

I want to record hundreds of little sound files and then assemble subsets of them sequentially into bigger files according to logical templates. Can anyone suggest some software or even just a general approach on how to do that?

Re: headphones vs speakers, it probably depends on what you're listening to. I do very quiet work, and the difference is enormous. A track that sounds fine on speakers can turn out to have all sorts of little noises when played through headphones.

When recording live lectures, I always got the best results using a Presonus Tube Pre-amp, even with the cheap cheap microphones I was given. I'm talking no noise floor to speak of.
