It is possible to set up Audacity to do a single scheduled recording, but a) you need Audacity 1.3.x and b) It does not automatically save or Export the file - you have to do that manually, so it is not suitable for repeated scheduling. There are serveral ways, all of them are *near* future, I think. Check the nearest beta (1.3.6) and then stable (1.4.) versions. I think you want to record live or in your studio, with separate track for each instrument. Depending on type of your mixer, you have a line out for each intrument.
