The issue is that when you record in mono with a "stereo" interface the microphone and guitar inputs are combined. With the Remove Vocals option, it's not actually a "cut". Normally the bass is centered (identical in the left & right channels) so the vocal remover kills the bass along with the vocals. You mean even-out the volume, right? Making the loud parts quieter and/or the quiet parts louder? That's "dynamic compression" or "automatic volume control" or automatic gain control". You can use the Envelope Tool to fade-up the quiet parts or fade-down the louder parts. There is a Leveller effect....

Audacity can record your audio but you'll need a video editor to combine the audio & video together.

And, there is a possibility you could get "glitches" if you are playing video while recording on the same computer. Audacity works best when you can minimize multitasking while recording.

And for example if i open a 16 bit file and then export it again to 16 bit, isnt audacity gonna introduce unnecessary dither if it downsamples it again from 32bit?
Yes, there is the possibility of unnecessarily dithering, or dithering multiple times. You can optionally disable dither if you wish.
