Fixing a "pothole" in a recording

I've transferring some old vinyls to digital, in order to put them onto CDs. Mostly the records are in pretty good shape. However, on one particular track, there was some damage severe enough to cause the tone arm to keep skipping back to the same track repeatedly. I managed to record through it by ...

Editing a single track

I'm probably overlooking the obvious, but how do you edit just one track of a stereo pair? For example, when one channel has a glitch that needs repair, but the other one doesn't, how do you avoid selecting both tracks?
