One project I know is a lost cause for a track, but the other one had both tracks(stereo acoustic guitar and mono vocal) recorded within Audacity itself. Enough with trying to open the project as is, is there a way I can piece each audio file from the _data folder into the tracks they were originall...

I have had only two projects out of my 5 do this, they were all moved in a group together.

So what is Audacity trying to say? The data folder is with the aup file. How is it not found?
