Okay, I think I got it.

I was thinking that Audacity (when I first found out about it yesterday) was along the lines of Microsoft's Sound Recorder (gasp!), so that's what I was expecting but with more features. (More gasps, chokes and burials to come!)

If you insist on hitting the Stop button, then there's not much we can do for you. If you press Pause, Audacity will go into Record Pause and you can pick up right where you left with another Pause key.
